The crumble itself had the perfect texture, crunchy and squidgy, the fruit was sugary and intense, the syrup exactly the right viscosity. The jury was out on the sloe stones, which made up roughly 45 per cent of the dish and interrupted every mouthful. I don't know whether it's beyond the call of duty for a chef to remove the stones.
